Mini Pancake Muffins

These super easy mini muffins are a great snack to make ahead and grab on the go. These are so simple you’ll be making a batch every time you make pancakes up for breakfast. These snacks are quick to make and perfect for little hands. Just set aside a little extra pancake batter when you’re doing breakfast and fill your cupcake tin 3/4 full. Bake in the oven at 350′ for 10-15 min or until firm. These snacks can be stored in the fridge as a quick breakfast or a snack to take on the go. They also freeze well so make a few batches and store them for future use.

You will need: 

– Pancake mix (box or from scratch)

– Mini muffin tin

– Pancake add-ins

Cooking with kids

Although these pancake muffins are great made ahead of time they’re also a fun cooking activity to do with the kids. Your littles can help measure, mix and stir the batter or you can mix it up the night before. Set out a variety of tasty fillings to add to their muffins, they’ll love creating their own! As you probably know, getting children involved in cooking is a great way to build a positive relationship with food and teach important life skills. It’s also helpful for encouraging your picky eater to try new things as kids are often eager to taste the foods they cook themselves.
